few months ago I bought this cute cookie cutter and I thought that a super easy recipe for butter cookies was needed to be baked and posted here for you all. these cookies are a classic, crispy and not too sweet, that’s the reason I decided to paint some of them with dark chocolate.
so if you don’t have much ingredients at home and you want something yummy and super easy to bake..here you are!
and yeah, I have to confess that I’m eating this little beauties every morning for breakfast with a cup of oat milk or tea .)
(makes about 40 cookies)

200g caster sugar
200g unsalted butter
500g plain flour
1 tsp vanilla extract
¼ tsp salt
1 tsp baking powder
70g dark chocolate (optional)
· step by step ·
in a saucepan melt the butter with the sugar and water, until smooth. set aside and leave it to cool a bit.
in a bowl pour the flour, baking powder, salt and stir.
add the melted butter, vanilla extract and mix everything.
place the dough in a bowl covered with cling film in the fridge for about 2hrs.
preheat the oven at 180ºC and prepare a baking tray with baking paper.
spread some flour on the table and roll the dough at 3mm.
with some flour also in the cookie cutter, cut out and place the shapes into the prepared baking tray.
bake them for about 8 to 10 minutes, until they’re golden on the top.
take them out from the oven and wait 5 minutes until you can remove them and place on a cooling rack to completely cool.
melt some dark chocolate over a bain marie and with a cooking brush paint the cookies.

it’s very important to put a bit of flour in the cookie cutter every time you’re cutting, even if the shape is simple, because then the cut on the cookie will be more clean. trust me.
