layers of chocolate crêpes..they are healthy, easy and fast to make, and let me tell you that they are irresistible with season’s fruit. also, the taste of the oatmeal in a crêpe it’s very curious, and the chocolate smell..well you can perfectly imagine right?
I really enjoyed to make this new recipe because I didn’t know how was going to end and look at these beautiful crêpes that we have here! In fact they don’t exist anymore, I eat all them already..ups!
I just want to eat them again and again with a cup of tea, now that summer seems that’s gone from the city.
CHOCOLATE OATMEAL CRÊPES
(makes about 16)

¼ tsp salt
30g cocoa powder
4 egg whites
½ tsp vanilla extract
3 Tbsp maple syrup
360ml oat milk
handmade plum jam

blend the oats until they are like coarse flour.
add the salt and cocoa powder and combine well.
pour in the egg whites, vanilla extract, maple syrup and 240ml of milk and stir everything until it’s well combined.
place the batter in the fridge for about 1hr.
add the rest of the milk (120ml) and stir again.
spread a little bit of butter into the saucepan and when it’s hot enough you can start to pour little amounts of batter on a low heat.
it takes around 1min the see how the edges start to set, then you can roll the crêpe.
when you’re done with all the batter just top them with whatever you like, I chose banana, pear and handmade plum jam.
