do you remember about those beautiful VEGAN LEMON TARTS that I baked? well, this is the giant version to place your palates.
I wanted to make an experiment with these three words: vegan + walnuts + figs, and this baby tart was born. really surprised about the incredible result I wanted to share with you this new recipe.
I will definitely try to bake more with figs, they have the perfect sweetness! don’t you think so? I love them!
VEGAN WALNUT TART WITH FIGS
(makes about 12 serves)

14 tsp virgin coconut oil
3 Tsp water
¼ tsp salt
150g chopped walnuts
340ml coconut milk
zest of 2 small lemons
natural juice of 1 small lemon
1 + ½ tsp vanilla extract
6 sliced figs
· step by step ·
preheat the oven to 180ºC.
prepare a 25cm mould with a bit of butter.
break the biscuits in pieces and place in a food processor and pulse until turns to consistence crumbs.
add the coconut oil, water, salt and mix by hand with a wood spoon until it’s well combined.
distribute the mixture to the prepared mould and press uniformly until everything it’s firmly packed.
bake for about 10min into the oven.
leave to cool 20min. aprox.
place all the walnuts in a food processor until are crumbs.
add the coconut milk, lemon zest, lemon juice, vanilla extract and mix everything until it’s creamy and thick.
pour the mixture into the tart uniformly.
freeze the tart for 1h minimum.
to serve let thaw for 1h in the fridge.

the baking part of the crust it’s optional, it’s just to make it a bit more crispy, so you can skip that if you want.
