to eat pistachios is like a drug, you can stop whenever you want..but you never stop, do you? I can eat pistachios like there’s no tomorrow until there’s no more pistachios in the bowl. then I fill it quickly and the circle starts again.
I must confess that I’m in love with this pistachio almond yogurt ice cream, it’s extremely easy to prepare, healthy, creamy, salty and seet. what else do you want from an ice cream?!
PISTACHIO ALMOND YOGURT ICE CREAM
makes about 4 servings

200g greek natural yogurt
1 large banana frozen into chunks
15g frozen raw spinach
2 Tbsp honey
¼ tsp almond extract
5 ice cubes

In a food processor blend together yogurt, banana, spinach, avocado, honey, almond extract, pistachios and ice.
once everything is well blended process the ice cream according to your ice cream maker’s instructions.
spoon the mixture into a clean container bit by bit mixing chunks of pistachio inside the mixture, and on the top sprinkle a few big chunks to garnish.
cover it and leave it freeze for about 2hrs.

if you don’t have an ice cream maker don’t be sad, you still can make it! just pour the mixture into a container, cover and leave into the freezer for about 3hrs, and that’s it!
the ice cream will keep well in the freezer for 7 days.
looks like the quantity of almond extract is so small but..be careful little padawans, almond extract is usually concentrated and strong.
