after a break I’m back in the kitcken with my new friend mr. ice cream maker, I’m so lucky to meet you! to celebrate this new but strong friendship I decided to make this incredible blueberry biscuit ice cream.

the key of this ice cream are the crumbs and chunks of biscuits, so don’t be afraid with the quantity, more chunks always mean more flavour!

makes about 6 servings

· ingredients ·
blueberry compote
150g blueberries
½ natural lemon juice
60g caster sugar

sweet cream base
2 large free range eggs
100g caster sugar
250ml whole milk
500ml whipping cream

8 maría biscuits

· step by step ·
blueberry compote
combine the blueberries, sugar, and lemon juice in a small saucepan over medium heat.
cook it for 5min until the mixture has thickened.
spoon into a small container and leave it cool, then cover and set in the fridge to chill.

sweet cream base
whisk the eggs with the sugar, for about 2min, until it’s light and fluffy.
add the whipping cream, milk and whisk.
process ice cream according to your ice cream maker’s instructions.
once it’s done, spoon in the blueberry compote and the chopped biscuits little by little in a container.
cover it and leave it freeze for 4hrs minimum.

· tips ·
don’t panic if you don’t know what is a maría biscuit, you can use a regular one like digestives.
you can also substitute whipping cream for heavy cream if you like it more.
