for me pancakes are not just pancakes, are pretty little moments with pretty people. that’s the reason I want to dedicate this new post to my fellas, because meanwhile we were doing and eating pancakes we had lots of good moments.
I want to add also that I started to bake seriously because of the pancakes, it was the first recipe I wanted to improve by myself, so here you have these smooth ricotta babes for your pleasure.

4 large free range eggs
180ml whole milk
150g plain flour
1/2 tsp vanilla extract
1 tsp baking powder
¼ tsp salt
250g ricotta cheese

stir the egg yolks, milk, sifted flour, vanilla extract, baking powder and salt with a whisker.
add the ricotta cheese but whisk just a little bit, you want to have lumps in the batter.
whisk the egg whites in a separate bowl and when they are stiff you can mix it with the batter so gently, not fast! You want to have an airy batter.
finally, in a large pan over a medium heat with a bit of butter pour little amounts of the batter one by one.
once they are done, you can top them with almost whatever you want, I put some butter and obviously honey.

you can use another kind of cheese for this recipe like fresh cheese.
the stiff egg whites makes the difference, trust me, the result is gonna be so smooth.
