what’s better than a cookie? a giant cookie. and what happens if we transform that on a giant s’more cookie? well you can become diabetic in one bite, but also it’s bloody delicious!

the little story for this recipe starts in a dream, I literally was dreaming with a giant cookie so the next day I baked it. make your dreams come true. easy as that my friend.

makes about 12 servings

· ingredients ·
giant cookie
170g plain flour
1 tsp cornstarch
1/4 + 1/8 tsp bicarbonate of soda
1/4 tsp salt
120g unsalted butter
110g brown sugar
50g caster sugar
1 large free range egg
1 + 1/2 tsp vanilla extract
150g milk and white chocolate chips

150g milk chocolate
60ml whole milk

50g little marshmallows

· step by step ·
giant cookie
preheat the oven to 170ºC and prepare a cake mould with wax paper.
mix together the flour, cornstarch bicarbonate of soda and salt.
in a sauce pan melt the butter at low heat, until it’s half melted, then remove from the heat and keep mixing until it’s totally melted.
add to the butter the brown and caster sugar, then the egg and the vanilla extract.
add to the wet mix the dry one bit by bit.
finally stir in the chocolate chips.
spread the dough into the prepared cake mould.
bake it for 15 to 18 min.

in a sauce pan melt together the chocolate and the milk on a medium heat.
when the cookie is completly cool spread the chocolate on the top.

to be a giant s’more cookie we need marshmallow, so spread them on the top of the cookie, now with the chocolate, and with a blowtorch burn them just a little bit to turn them golden and brown.

· tips ·
I didn’t want to put lots of marshmallows to make the cookie more lightly…hahaha but usually people use the doble, so about 100g. depends on how healthy you feel that day.
