I have been eating financers for three years every week, and no I’m not kidding, and yes it was wonderful. don’t look at me like that alright? I can explain everything..I was working in a bakery with sooo many delights. that’s it. guilty.

do you know that people that says: “if you work in a bakery you end hating sweet”? well, let me tell them something: “wrooooooooong”.

makes about 40

· ingredients ·
100g butter
200g icing sugar
70g plain flour
70g ground almonds
1/8 tsp baking powder
6 egg whites
1 tsp vanilla extract

· step by step ·
in a saucepan, melt the butter over medium heat until the colour is light brown. Leave to cool.
in another bowl mix the icing sugar, flour and ground almonds.
add to the mix the baking powder and the egg whites one at a time, stirring with a spatula.
pour in the vanilla and the brown butter and stir everything until is well combined.
keep the batter into the fridge for at least 12hrs.
preheat the oven to 210ºC.
butter and flour the moulds and fill them ¾ with the batter.
bake for 8 min.
remove from the oven and allow to cool for 5 min, then remove from the moulds and allow to cool completely.

· tips ·
you can use almond flour if you don’t have almonds ground.
melt a bit of butter to use for the moulds, it’s easier than using a piece of butter for each one.
you can deep them, once they’re cooled, in dark chocolate.
